Corn Muffins

Corn muffins are a delicious side dish to enjoy. These muffins are simple to prepare and make at home. This side dish is an appetizing side to savor with a main-course meal. 

These corn muffins are from the Jiffy Mix line. This is an American brand that has been around for many years. I used the basic corn muffin mix from Jiffy. They offer a variety of Jiffy mixes, including muffins, cakes, biscuits, and pancakes. The corn muffin mixes offer a great line of mixes to choose from. They offer honey, apple, blueberry and more.

You may opt to follow the Jiffy Corn Muffin instructions or add additional ingredients if desired. I followed the instructions, then added ground corn meal to the muffins. This step is optional, as it is not included in the instructions. The added ground corn meal provides a bit more texture and flavor to the muffins.


Ingredients Details

Corn muffin mix: Jiffy corn muffin mix; alternative any brand of corn muffin mix
Egg: white egg
Milk: whole milk
Cream: heavy cream; alternative Half and Half
Cooking oil: vegetable oil; alternative olive oil, or any other desired cooking oil
Butter: salted butter
Cornmeal: ground yellow cornmeal; alternative ground white cornmeal





Ingredients

  • 1 packet corn muffin mix (8.5 oz) 
  • 1 egg
  • ¼ cup milk
  • 2 tablespoons heavy cream
  • ¼ cup vegetable oil
  • 1 tablespoon butter
  • Ground cornmeal

Instructions

Preheat the oven to 350 degrees.

Muffin mixture. In a bowl, whisk the corn muffin mix, egg, milk, heavy cream, and vegetable oil.

Muffin pan. Grease a nonstick muffin pan with butter. Sprinkle the ground yellow cornmeal into the muffin pan. Then pour in the muffin mixture.

Bake. Bake the corn muffins for 13-15 minutes.
