Stuffed Eggs on Banana Leaves

Stuffed eggs on banana leaves is a creative and unique twist to the traditional stuffed egg recipe. The banana leaves add a creative touch to these flavorful eggs. A simple and appetizing stuffed egg recipe. 

The stuffed eggs on banana leaves are boiled eggs cut in half, filled with egg yolk mixture, and then placed on fresh banana leaves. For the banana’s leaves, I used fresh banana leaves from my garden. If banana leaves are unavailable, local Asian supermarkets may have the leaves, or you can substitute for another fruit or vegetable leaf.

Ingredients Details

Banana leaves: fresh banana leaves; alternative: any type of vegetable leaf.
Eggs: white eggs; alternative: brown eggs
Mayonnaise: real mayonnaise
Mustard: yellow mustard; alternative: Dijon mustard
Pickle juice: sweet pickle juice; alternative; any type of pickle juice
Salt: plain salt
Pepper: ground black pepper
Toppings
Cilantro: fresh cilantro
Tomato: Roma tomato. Alternative: grape tomatoes
Raisins: Great Value sun-dried raisins or any brand of raisins
Lemon: fresh lemon. Alternative: fresh lime

Ingredients

  • 4 banana leaves
  • 7 eggs
  • ½ cup mayonnaise
  • 2 tablespoons mustard
  • 1 tablespoon sweet pickle juice
  • Salt and pepper to taste
  • ¼ cup cilantro
  • 2 tablespoons tomato
  • 1 tablespoon raisins
  • 1 lemon

Instructions

Eggs. Boil the eggs. Once cool, peel the eggs. Cut the eggs in half. Scoop out the yolk.

Egg yolk mixture. In a bowl, add the egg yolk, mayonnaise, mustard, sweet pickle juice, salt, and pepper. Mix the bowl ingredients. Add the yolk mixture to the egg halves. 

Toppings. Add the pieces of tomato, cilantro, and raisins to each egg half. 

Dish. Lay the banana leaves on a dish, then place the stuffed eggs on top of the leaves. Add pieces of cilantro and lemon around the eggs.
