Shepherd’s Pie Easter Lunch Meal
Easter is a bright and beautiful holiday that is celebrated during springtime in the states. It is also a great time to come together and enjoy a delicious Easter meal. There are numerous different types of Easter recipes that can be made for this special holiday. Ham dishes, casseroles, scalloped potatoes, spring vegetables, and Easter bread are a few common and popular Easter-made dishes. Various drinks are also enjoyed for the Easter holiday, like non-alcoholic punch, white sangria, and sparkling peach soda. Putting together an Easter lunch meal can be simple and cost-effective. I put together a small lunch table with common Easter dishes.

Ingredients: club soda and orange food coloring.
Instructions: Add club soda to a pitcher. Then add a few drops of orange food coloring to the club soda. Mix until combined.
There are many types of alcoholic drinks that are enjoyed for Easter. There are also non-alcoholic refreshments that make a savory Easter drink. Various punch drinks make great Easter refreshments, from rainbow and citrus to Easter punch.
For the Easter lunch drink, I opted for a simple soda drink that would be closely associated with Easter colors. This was a simple drink to make, only combining club soda and orange food coloring and then mixing. This orange club soda tastes like a fizzy club soda with no added flavor since food coloring does not add flavor but only color.
Appetizer: Stuffed Eggs, Tomato, and Vegetable Cream Cheese
Ingredients: eggs, mayonnaise, mustard, pickle juice, tomato, green onion, and vegetable cream cheese.
Instructions: Boil, peel, and cut the eggs in half. Remove the egg yolks. In a small bowl, add the mayonnaise, mustard, egg yolks, and pickle juice. Mix until combined. Add the egg mixture to each of the egg white halves. Cut the top part of the tomato and add a small scoop of vegetable cream cheese inside the tomato. Then garnish with green onion.
Stuffed eggs are a popular dish for Easter. There are various egg variations from paprika seasoning, adding pieces of vegetable ingredients, or being creative with the eggs by adding a pop of different color to each of the eggs. Plain stuffed eggs can also make a great egg dish for Easter.
For this lunch meal, I made stuffed eggs with no added extra seasoning. I added a whole tomato without the tomato top to the middle of the egg dish. I also added vegetable cream cheese inside of the tomato and garnished it with fresh pieces of green onion around the tomato. This was a delicious starter dish. The combination of stuffed eggs, tomato with vegetable cream cheese, and fresh green onion is an appetizing blend of appetizers.
Main Dish: Shepherd’s Pie
Ingredients: pie crust, potatoes, butter, ground beef, tomato, green onion, onion, and cilantro.
Instructions: Peel and cut the potatoes. Bring to a boil a pot of water with salt, then add the potatoes. Cook the potatoes until tender, then mash the cooked potatoes and add butter. Cook the ground beef with pieces of tomatoes, green onion, onion, and cilantro. Add the ground beef filling to a pie crust, then layer it with mashed potatoes. Bake the shepherd’s pie in the oven for about half an hour or until lightly golden brown.

The shepherd’s pie and white rice have a nice balance between flavor and texture.
Dessert: Tapioca Cornstarch Pudding with Sprinkles
Ingredients: tapioca starch, cornstarch, granulated sugar, evaporated milk, milk, and sprinkles.
Instructions: On the stovetop in a saucepan, add the tapioca starch, cornstarch, granulated sugar, evaporated milk, and milk. Stir until the mixture thickens. Once the pudding thickens, let it cool. Garnish with blue, green, and yellow sprinkles.

Dessert: Plain Cupcakes
Ingredients: cake flour, baking powder, butter, eggs, and granulated sugar.
Instructions: In a bowl, add the cake flour, baking powder, butter, eggs, and granulated sugar. Mix until combined. Grease a muffin pan with butter, then add the cake flour mixture. Bake the cupcakes at 300 degrees for about 20 minutes.
Cupcakes are popular desserts in the states and throughout many regions of the world. It is a common dessert for Easter. Different types of Easter themed cupcakes are made for Easter holiday celebrations. Many popular cupcakes have frosting and various decorative designs. Cupcakes can also be made without frosting. Cupcakes that have not been frosted are a delicious way of enjoying mildly sweet cupcake desserts without the added sweet frosting.
For these cupcakes, they were made with cake flour mixed with common baking ingredients and then baked. I added a few drops of yellow food coloring to a few of the cupcake mixture. This was to give a few cupcakes a pop of yellow color. Once baked, I let the cupcakes cool, and that was it. These cupcakes were soft and sweet, yet still great cupcakes to enjoy for the Easter holiday.
