Salmon with Vegetables and Cake Dinner Meal

A delicious baked salmon dish paired with vegetables, freshly made pineapple juice, and lightly sweet, moist guava cake makes a filling and delightful dinner meal.

Salmon is a popular fish dinner option. It is a light and appetizing seafood dish that often pairs with a variety of side dishes. There are a wide variety of vegetables that pair great with salmon, such as green beans, spinach, and zucchini. Many dinner tables can also include sweet refreshments and desserts. Iced tea and warm sweet pies are common American drinks and dessert options. Putting together a dinner table can be simple and cost-effective. I assembled a small salmon table that included a fresh refreshment, common salmon sides, and a lightly sweet dessert.

Table Meal 


Drink: Pineapple Juice 

Ingredients: fresh pineapple, water, and sugar.  

Instructions: In a blender, add fresh pieces of fresh pineapple, water, and sugar. 

Pineapple juice is a flavorful fruit drink. A variety of different brands of pineapple juice can often be found in US supermarkets. Different ways to purchase pineapple juice include frozen, canned, or carton pineapple juice. Frozen pineapple is a good alternative to fresh pineapple. The nutrients, convenience, and taste of frozen pineapple make it an ideal alternative for fresh pineapple. Fresh pineapple is available year-round in the states and is an excellent option for using to make fresh pineapple juice at home. 


This is a simple fruit drink to make at home. I used fresh pineapple and water, then added about a spoonful of sugar to a blender and blended. This was a fruity, fresh pineapple juice that pairs nicely with a salmon dish. 


Salad: Leafy Green Salad 

Ingredients: Leafy greens, boiled eggs, tomatoes, orange bell pepper, and fresh lemon juice.  

Instructions: Boil the eggs, cut the tomatoes into wedges, and cut the bell pepper into pieces. Squeeze a lemon for fresh lemon juice. In a bowl, add the leafy greens, then add the boiled eggs, tomato wedges, and bell pepper. Add lemon juice to the salad for added flavor. 

Salads make a great appetizer prior to a meal or a light side dish. Supermarkets often offer prepackaged salads that contain toppings and salad dressing. Small salad bowls typically include protein meat, toppings, and dressing. Fresh green leaves are a refreshing option to customize a simple salad at home. Leafy green salads are simple salad options to make at home.  

This leafy green salad was kept very simple. I boiled a few eggs to add to this salad. I added fresh leafy greens to a bowl, then the boiled eggs, tomato wedges, and cut bell pepper pieces. For this salad, I opted not to add a salad dressing. For added flavoring, I added fresh lemon juice and then combined all the ingredients. This leafy green salad was a light and tasty dinner salad. 



Main and Side Dish: Baked Salmon and Asparagus 

Ingredients: Salmon—Atlantic salmon, butter, and lemon. Asparagus—fresh asparagus, water, olive oil, salt, and black pepper.  

Instructions: Add the salmon to a baking sheet with aluminum foil. Add butter to the salmon and fresh pieces of lemon. Bake until the salmon is tender. In a pot, add water and salt. Bring to a boil. Add the asparagus. Cook until tender. 

Salmon 

Salmon is a popular fish choice worldwide. It is often a common fish served at various seafood restaurants and cooked at homes. Fresh fish can often be found in seafood markets. Frozen packaged salmon is often available in the seafood section of supermarkets and is also a popular fish option to purchase. I purchased frozen Atlantic salmon from my local warehouse club. 

Salmon can be cooked a few different ways; this includes baked, pan-fried, and grilled. I opted to bake the salmon for this meal. I added butter and cut pieces of fresh lemon to add to the fish prior to baking. I baked the fish until it was moist and tender. 

Asparagus 

Asparagus is a tasty side dish that is often paired with salmon. The flavors of the fish and asparagus are a delicious combination. Different brands of canned and frozen asparagus are often available in supermarkets. Fresh asparagus is generally available year-round in the states. Fresh is also a great choice for its texture.  

Asparagus can be sauteed, baked, or boiled. For the asparagus, I also purchased fresh asparagus for this dish. I boiled the asparagus until they were soft and firm. Then added olive oil and seasoned it with salt and black pepper. The asparagus was flavorful and slightly chewy in texture. 


Side Dish: Boiled Garlic Butter Mini Potatoes  

Ingredients: red and yellow mini potatoes, garlic, butter, olive oil, salt, and black pepper. 

Instructions: Mince the garlic. In a pot, add water and salt. Bring to a boil, then add the mini potatoes. Boil until tender. Drain the potatoes. Add the mini potatoes back to the stovetop and add the garlic, butter, olive oil, salt, and black pepper. Combine all the ingredients. Allow the ingredients to infuse together by low heat on the stovetop. 

Potatoes are a versatile vegetable and a common ingredient used in numerous dishes. They also make a delicious side dish that can be cooked several different ways. Potatoes can be mashed, fried, grilled, baked, and boiled. Boiling is a great way of cooking potatoes. It is known to be a simple method. Smaller-sized potatoes generally do not take as long as bigger potatoes, making mini potatoes a nice and quick option for a potato dish. Frozen seasoned mini potatoes are convenient options often available at supermarkets. Yellow, red, or mini mixed-colored potato bags are also often available year-round at supermarkets. 

For mini potatoes, I purchased and used a red and yellow mix of mini potatoes. I boiled the mini potatoes and then drained them. I added the mini potatoes back in the pot and then added minced garlic, butter, olive oil, salt, and black pepper for taste. The ingredients melt and infuse into the cooked, heated mini potatoes. These mini potatoes were soft, tender, and flavorful from the tasty butter sauce ingredients added to the potatoes. 



Side Dish: Broccoli  

Ingredients: fresh broccoli, water, and salt.  

Instructions: Cut the broccoli into florets. In a pot, add water and salt. Bring to a boil, then add the broccoli florets. Cook until tender. 

Broccoli is known as a healthy and common vegetable in the states. Canned, frozen, bagged, or fresh broccoli are a few different options for purchasing broccoli. It is a versatile vegetable that can be consumed raw or cooked. A few ways of cooking broccoli include boiling, steaming, and grilling. Stir-frying is another common cooking method in Asian American cuisines. Broccoli is known to cook quickly, and the texture is ideal for stir-fry dishes.  

For this broccoli dish, I purchased fresh broccoli and opted to boil it until tender yet retaining a crispy texture. This broccoli dish was delicious. The boiled broccoli had an earthy, mild flavor that paired great with the other dishes. 


 
Dessert: White Yellow Guava Cake 

Ingredients: fresh guava, sugar, white cake mix, yellow cake mix, eggs, vegetable oil, water, cream cheese, heavy cream, butter, and powdered sugar.  

Instructions: Cake mixes—in a bowl, add the white cake mix, eggs, water, and vegetable oil. Mix until smooth. Repeat for the yellow cake mix. Bake the cakes. Cream cheese—in a bowl, add the cream cheese, butter, and powdered sugar. Mix until smooth. Guavas: In a pot, add water. Bring to a boil, then add peeled and cut guavas. Cook the guavas until tender. Strain the guava, then transfer it to a pan. Add sugar. Simmer the guava into a thick paste. Assemble—the yellow cake is the first layer, smear a layer of the guava paste as the second layer, then add the white cake as the third top layer. Cover the entire cake with cream cheese frosting. 

Guavas are a popular type of tropical fruit in Latin America. They are naturally sweet with a unique fruity blend. Guavas can be preserved or made into jelly or paste. Guava paste is a great addition to cakes. It provides a flavorful sweet flavor to dessert cakes. Various brands of guava pastes are often found in supermarkets or in Latin markets. Fresh guavas can be purchased, and the guava paste can be made at home. 



This guava cake is flavorful and simple to make at home. I used white and yellow cake mix boxes for this cake. I made the cake and cream cheese mixtures. Then I boiled and simmered fresh guavas. Assembling the cake includes only a few simple steps. I layered the cake beginning with the baked yellow cake, guava paste, and baked white cake, and then covered the cake with cream cheese frosting. This cake was lightly sweet, soft, and an appetizing cake for this meal. 







Summary 

There are various light seafood meal options to make for a homemade dinner. Seafood dishes can be a light and nutritious alternative to meat dishes. Salmon is a great white meat to include in a dinner dish. It can also be garnished with many types of ingredients, from fresh herbs, fruits, and citrus zest. A well-seasoned salmon is delicious; it can also pair with several different side dishes and is not very hard to prepare at home. 

Salmon is one of my favorite fish types for its flavor, texture, and availability in supermarkets. It is also a delicious fish choice for dinner. I opted to create and make a simple salmon dinner. Fresh pineapple juice with baked salmon and a combination of fresh vegetables with a naturally sweet-flavored guava cake makes a tasty salmon dinner.
